Bulgur With Mushrooms

Instructions
- Preheat oven to 350°F.
- Soak dried mushrooms in hot water; set aside.
- Heat butter in a large skillet over medium heat.
- Saute diced onion and celery until soft.
- Push onion and celery aside, add cleaned and sliced fresh mushrooms, and cook for 4 to 5 minutes.
- Squeeze liquid from dried mushrooms, reserving the liquid.
- Stir bulgur into the skillet and cook until it begins to brown.
- Add beef stock and 1/4 cup of the mushroom soaking liquid, then bring to a boil.
- Reduce heat, cover, and cook for 10 minutes or until bulgur is tender.
- Add additional mushroom liquid as needed during cooking.
- Cover and transfer to the oven; bake for 20 minutes until steaming.
- Stir in toasted nuts and sprinkle with chopped parsley before serving.
