Bulgur With Mushrooms

Ingredients

  • 3/4 oz dried mushrooms
  • 1/4 cup unsalted butter
  • 3/4 pound onion, diced
  • 2 medium stalks celery, diced
  • 1/4 pound fresh wild mushrooms (cremini, shiitake)
  • 1 1/2 cups bulgur
  • 1 3/4 to 2 1/4 cups beef stock
  • 1 cup toasted, coarsely chopped pecans and pine nuts
  • fresh chopped parsley

Instructions

  1. Preheat oven to 350°F.
  2. Soak dried mushrooms in hot water; set aside.
  3. Heat butter in a large skillet over medium heat.
  4. Saute diced onion and celery until soft.
  5. Push onion and celery aside, add cleaned and sliced fresh mushrooms, and cook for 4 to 5 minutes.
  6. Squeeze liquid from dried mushrooms, reserving the liquid.
  7. Stir bulgur into the skillet and cook until it begins to brown.
  8. Add beef stock and 1/4 cup of the mushroom soaking liquid, then bring to a boil.
  9. Reduce heat, cover, and cook for 10 minutes or until bulgur is tender.
  10. Add additional mushroom liquid as needed during cooking.
  11. Cover and transfer to the oven; bake for 20 minutes until steaming.
  12. Stir in toasted nuts and sprinkle with chopped parsley before serving.
