Ingredients

  • 1 Tbsp olive oil
  • 2 garlic cloves minced
  • 1 cup sliced mushrooms
  • 1/2 cup diced red peppers
  • salt and pepper to taste
  • 4 oz shredded Monterey Jack cheese
  • 1/2 cup chopped onion
  • 2 cups thinly sliced zucchini
  • 1/2 tsp basil leaves
  • 4 eggs

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a skillet and sauté chopped onion and minced garlic until fragrant.
  3. Add sliced zucchini, mushrooms, red peppers, basil, salt, and pepper; cook until vegetables are tender-crisp.
  4. In a bowl, beat eggs; stir in 2 ounces of shredded Monterey Jack cheese and the sautéed vegetables.
  5. Grease an 8-inch square baking dish with olive oil.
  6. Transfer the vegetable and egg mixture into the prepared baking dish and sprinkle with remaining cheese.
  7. Bake at 400°F (200°C) for 25 to 30 minutes until set and golden on top.
