- Add sliced zucchini, mushrooms, red peppers, basil, salt, and pepper; cook until vegetables are tender-crisp.
- In a bowl, beat eggs; stir in 2 ounces of shredded Monterey Jack cheese and the sautéed vegetables.
- Grease an 8-inch square baking dish with olive oil.
- Transfer the vegetable and egg mixture into the prepared baking dish and sprinkle with remaining cheese.
- Bake at 400°F (200°C) for 25 to 30 minutes until set and golden on top.
