Ingredients

  • 1 1/2 Cups all purpose flour
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground nutmeg
  • 1/4 tsp baking powder
  • 1 Cup sugar
  • 1 Cup finely shredded unpeeled zucchini
  • 1 egg
  • 1/4 Cup cooking oil
  • 1/4 tsp finely shredded lemon peel
  • 1/2 Cup walnuts

Instructions

  1. In a mixing bowl, stir together the flour, cinnamon, baking soda, salt, nutmeg, and baking powder; set aside.
  2. In another bowl, combine sugar, shredded zucchini, egg, cooking oil, and lemon peel; mix well.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  4. Fold in the walnuts.
  5. Pour the batter into a greased loaf pan.
  6. Bake in a preheated oven at 350°F (175°C) for about 50 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the loaf to cool in the pan for 10 minutes, then remove and cool completely on a wire rack before slicing.
