Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 large eggs
  • 3/4 cup salad oil
  • 1 cup quick cooking or old-fashioned oats
  • 3 cups shredded zucchini
  • 1 teaspoon vanilla extract
  • 1 (4 oz.) can walnuts, chopped

Instructions

  1. Preheat oven to 350°F (175°C). Grease 9 x 5-inch loaf pans.
  2. In a large bowl, mix together the all-purpose flour, oats, sugar, brown sugar, baking soda, cinnamon, and salt.
  3. Add the eggs, salad oil, vanilla extract, and shredded zucchini to the dry ingredients. Mix until just combined.
  4. Fold in the chopped walnuts.
  5. Divide the batter evenly between the prepared loaf pans.
  6. Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pans for 10 minutes, then remove and cool completely on a wire rack.
