Instructions

  1. In a colander, mix shredded zucchini with salt and let stand until limp and liquid has drained.
  2. Rinse and drain zucchini well, squeezing out as much water as possible.
  3. While zucchini is draining, heat 2 tablespoons of olive oil in a wide frying pan over medium heat.
  4. Add chopped onion and stir often until soft, then remove from heat.
  5. In a mixing bowl, beat eggs; then add milk, grated Parmesan cheese, minced garlic, chopped basil, all-purpose flour, baking powder, ground pepper, and the sautéed onion mixture.
  6. Drain the zucchini and fold it into the batter.
  7. Pour batter into greased or lined madeleine molds or mini muffin tins.
  8. Bake at 375°F (190°C) for about 20-25 minutes until golden brown and a toothpick inserted comes out clean.
