Zucchini Ripiene offers a flavorful combination of tender zucchini shells filled with seasoned ground beef, herbs, and cheese, perfect for a satisfying family dinner or casual gathering.

Ingredients

  • 1/2 cup fresh chopped parsley
  • 1 pound ground beef
  • 1/2 teaspoon salt
  • pepper to taste
  • 1 clove chopped garlic
  • 1 sliced onion
  • 3 beaten eggs
  • 1/2 cup Italian breadcrumbs
  • 1/2 cup grated cheese
  • 1 can stewed tomatoes

Instructions

  1. Cut the squash in half lengthwise and scoop out the insides.
  2. Chop the insides and fry them in oil with parsley, onion, garlic, ground beef, and seasonings until browned.
  3. Allow the filling to cool slightly.
  4. Stuff the zucchini shells with the cooked filling.
  5. Beat the eggs and mix with Italian breadcrumbs and grated cheese.
  6. Pour the egg mixture over the stuffed zucchini.
  7. Pour stewed tomatoes around the zucchini in a baking dish.
  8. Bake until the zucchini are tender and the topping is golden.
