  • 2 tomatoes, chopped
  • 1 tsp. vinegar

  • 1 medium cucumber, chopped
  • 1 c. chopped, cooked beef

Instructions

  1. Pour boiling water over cracked wheat in a bowl.
  2. Let stand for 1 hour. Drain well into a colander.
  3. Return the drained cracked wheat to the bowl.
  4. Add canola oil, lemon juice, salt, pepper, chopped parsley, chopped green onions, chopped tomatoes, vinegar, chopped celery, and chopped cucumber.
  5. Mix well to combine all ingredients.
  6. Chill the salad for 2 hours or longer.
  7. Serve on lettuce-lined salad plates.
