Ingredients

  • 3 cups zucchini (raw), shredded
  • 1 cup Bisquick
  • 1/2 cup onion, chopped
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons parsley, chopped
  • 1/2 tablespoon salt
  • 1/2 tablespoon fines herbes
  • 1 1/2 teaspoons fresh oregano
  • 1 clove garlic
  • 1/2 cup vegetable oil
  • 4 eggs, beaten

Instructions

  1. Mix all ingredients in a large bowl until well combined.
  2. Spread the mixture evenly in a greased 9 x 13 x 2-inch pan.
  3. Bake at 325°F (160°C) for about 25 minutes until set and golden.
  4. Remove from oven and let cool slightly.
  5. Cut into 48 pieces and serve.
