Ingredients

  • 3 cups chopped zucchini
  • 1 large onion, chopped
  • 1 4-oz can mushroom stems and pieces, drained
  • 1/2 cup mozzarella cheese
  • 2 Tbsp butter
  • 8 tart shells
  • Pinch of salt
  • Pinch of garlic powder
  • Pinch of pepper
  • Pinch of sugar
  • 1 6-oz package cream cheese
  • 1/4 cup milk
  • 1 egg

Instructions

  1. Saute zucchini, onion, and mushrooms in butter for about 5 minutes.
  2. Add pinches of salt, garlic powder, pepper, and sugar. Cool.
  3. In a bowl, beat cream cheese, milk, salt, and egg until well mixed. Add cracked pepper.
  4. Combine the sautéed vegetables into the cream cheese mixture.
  5. Cook tart shells as directed. Cool.
  6. Just before serving, fill tart shells with the mixture.
  7. Sprinkle with mozzarella cheese and bake at 375° to 400° for 20 minutes.
