Ingredients

  • 2 lb. zucchini
  • 1 onion
  • 3 medium eggs

  • 1/2 c. bread crumbs

  • 2 Tbsp. olive oil

Instructions

  1. Slice the zucchini and chop the onion.
  2. Parboil the zucchini and onion for about 15 to 20 minutes, then drain well.
  3. Cook the rice until tender.
  4. In a mixing bowl, combine the cooked zucchini, onion, eggs, chopped basil, chopped parsley, cooked rice, bread crumbs, grated Parmesan cheese (reserve some for topping), salt, and pepper. Mix well.
  5. Pour the mixture into a greased 9 x 13-inch glass baking dish.
  6. Sprinkle the remaining Parmesan cheese on top.
  7. Bake at 350°F for 30 minutes or until the top is golden brown.
  8. Remove from the oven and cool well before slicing into squares and serving.
