Ingredients

  • 1 c. butter
  • 1 c. corn oil
  • 1 c. white sugar
  • 1 c. brown sugar
  • 1 c. coconut
  • 1 c. oatmeal
  • 1 c. chocolate chips
  • 1/2 c. nuts (optional)
  • 1 egg
  • 1 tsp. vanilla
  • 1 tsp. baking soda

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together butter, corn oil, white sugar, and brown sugar until well combined.
  3. Add the egg and vanilla; mix until smooth.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cream of tartar.
  5. Gradually add the dry ingredients to the wet ingredients, mixing well.
  6. Stir in coconut, oatmeal, chocolate chips, and nuts (if using).
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 13 minutes or until golden brown.
  9. Remove from oven and let cool on a wire rack before serving.
