Ingredients

  • 3 beaten eggs
  • 1/2 cup cooking oil
  • 1/2 cup milk
  • 2 1/2 cups sifted flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups shredded carrots
  • 13 1/2 oz can coconut
  • 1/2 cup maraschino cherries
  • 1/2 cup raisins
  • 1/2 cup pecans

Instructions

  1. Combine eggs, oil, and milk in a bowl.
  2. Sift all dry ingredients together in a separate bowl.
  3. Add the dry ingredients to the egg mixture.
  4. Mix well until combined.
  5. Stir in shredded carrots, coconut, maraschino cherries, raisins, and pecans.
  6. Pour the batter into greased and floured bread pans.
  7. Bake at 350°F (175°C) for 60 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool the bread for 10 minutes before removing from the pans.
