  • 1 c. confectioners sugar
  • 1 c. Cool Whip
  • 2 small pkg. instant chocolate pudding
  • 3 c. milk

Instructions

  1. Mix flour and pecans; melt margarine and pour into flour mix. Stir until well mixed.
  2. Press the mixture into the bottom of a large Pyrex baking dish. Bake at 350° until brown.
  3. Cool the crust.
  4. Blend cream cheese, confectioners sugar, and 1 cup Cool Whip.
  5. Spread the cream cheese mixture on the crust.
  6. Mix pudding mix and 3 cups milk for the next layer.
  7. Spread Cool Whip over the pudding layer and sprinkle with nuts.
  8. Refrigerate until served.

Tips & Substitutions

For a nut-free version, you can substitute the chopped pecans with crushed graham crackers or oats. Ensure the margarine is fully melted before mixing to avoid clumps in the crust. If you prefer a richer flavor, consider using butter instead of margarine. Make sure to let the crust cool completely before adding the cream cheese layer to prevent it from melting.

Serving Suggestions

Serve this delightful dessert chilled for the best texture. It pairs beautifully with a dollop of whipped cream or fresh berries on top. Consider serving it alongside a light salad or fruit platter for a balanced meal. For a fun twist, you could layer it in individual cups for a party or gathering.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. The layers may slightly soften over time, but the flavors will meld beautifully. It is not recommended to freeze this dessert, as the texture of the cream cheese and Cool Whip layers may change once thawed.
