Ingredients

  • 1 cup butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 4 eggs
  • 1/4 teaspoon salt
  • 2 teaspoons baking soda
  • 2 cups all-purpose flour
  • 1 cup wheat flour
  • 1 cup wheat germ
  • 6 large ripe bananas

Instructions

  1. Preheat oven to 250 degrees Fahrenheit.
  2. Cream together butter, white sugar, and brown sugar until smooth.
  3. Add eggs to the creamed mixture and beat well.
  4. In a separate bowl, sift together salt, baking soda, all-purpose flour, and wheat flour.
  5. Stir wheat germ into the flour mixture.
  6. Alternately add the flour mixture and mashed bananas to the creamed mixture, beginning and ending with the flour mixture.
  7. Stir in chopped pecans into the batter.
  8. Pour batter evenly into two well-greased loaf pans.
  9. Sprinkle each loaf with a little brown sugar, wheat germ, and chopped pecans.
  10. Bake for 1 and 1/2 hours or until a toothpick inserted in the center comes out clean.
