Ingredients

  • 3 medium acorn squash
  • 1/2 cup minced onion
  • 3 tablespoons butter
  • 1/2 cup chopped walnuts
  • 2 cups cooked brown rice
  • 2 eggs
  • salt
  • pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. Halve the acorn squash lengthwise and remove strings and seeds.
  2. Bake, covered with foil, until tender, about 25 minutes at 375°F.
  3. Scoop out the flesh, leaving about 1/4-inch shell.
  4. Mash the cooked squash well.
  5. Saute minced onion in butter until soft.
  6. Mix the sautéed onion with the mashed squash, chopped walnuts, cooked brown rice, beaten eggs, salt, pepper, and nutmeg.
  7. Heap the squash mixture into the squash shells.
  8. Bake in a 350°F oven for 10 to 15 minutes.
  9. Top with grated Cheddar cheese in the last few minutes of baking.
