Ingredients

  • 2 cups flour
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/3 cup brandy
  • 1 1/4 cups chopped pecans
  • 2 cups sugar
  • 1 1/4 cups oil
  • 2 eggs
  • 1 1/4 teaspoons vanilla
  • 2 cups sliced fresh apples

Instructions

  1. Combine the flour, nutmeg, cinnamon, baking soda, and salt in a bowl.
  2. In a separate large bowl, mix the sugar and oil until well combined.
  3. Add eggs to the sugar mixture and beat until smooth.
  4. Stir in vanilla and brandy.
  5. Fold in the sliced fresh apples and chopped pecans.
  6. Pour the batter into a lightly greased 13 x 9 x 2-inch pan.
  7. Bake at 350°F (175°C) for about 40 minutes, or until a toothpick inserted in the center comes out clean.
