Ingredients

  • 2 lb. potatoes, peeled and quartered
  • 8 c. water
  • 4 Tbsp. butter
  • 1 egg, slightly beaten

  • vegetable oil
  • salt pork
  • 1 tsp. salt
  • 1 tsp. vinegar
  • 1/4 cup tomato sauce
  • 1 lb. ground beef or pork
  • 2 oz. chopped ham
  • 1 green pepper
  • 3 sweet chili peppers, seeded
  • 1 onion
  • 2 cloves garlic
  • 6 stuffed olives
  • 1 tsp. capers

Instructions

  1. Boil potatoes until soft; drain.
  2. Add butter and whip well.
  3. Add egg, salt, cornstarch, and cool.
  4. Divide the potato mixture into 12 parts.
  5. Make a potato ball from each part and roll in cornstarch.
  6. Make a hole in the center of each ball and fill with the prepared meat mixture.
  7. Close the potato ball around the filling, then roll again in cornstarch.
  8. Fry the potato balls until brown, about 10 minutes.
  9. Prepare the filling: sauté ground beef or pork with chopped ham, green pepper, chili peppers, onion, garlic, olives, and capers.
  10. Add tomato sauce, vinegar, salt, and cook on medium heat.
  11. Turn to low heat, cover, and cook for 30 minutes.
  12. For pork: sauté salt pork and cook for 1 hour.
