Ingredients

  • 3 lbs ground beef
  • 2 lbs kidney beans
  • 2 cans tomato soup
  • 2 cans water
  • 2 cups celery, diced
  • 1 large green pepper, diced
  • 1 cup onions, diced
  • 1 cup carrots, diced
  • 2 cups potatoes, diced
  • chili powder (optional)

Instructions

  1. In a 5-quart pot, combine diced celery, carrots, kidney beans, and tomato soup.
  2. Fill the empty tomato soup cans with water and add to the pot.
  3. Cook over low heat, stirring occasionally.
  4. In a large skillet, brown the ground beef, stirring frequently to keep it in small pieces.
  5. Add salt and pepper to taste.
  6. Pour the browned beef into the pot.
  7. In the same skillet, brown the green pepper and onions, then add them to the pot.
  8. Simmer the mixture over low heat for at least 4 hours, stirring occasionally.
  9. One hour before serving, add diced potatoes and cook until tender.
