African Chicken
A flavorful African-inspired chicken dish featuring tender chicken, sweet potatoes, and bananas, simmered in a savory wine sauce with aromatic spices, perfect for hearty, exotic meals.
Ingredients
- 2 1/2 to 3 lb chicken parts ⓘ
- 1/2 cup salad oil ⓘ
- 1 medium onion, chopped
- 1 clove garlic, chopped ⓘ
- 2 Tbsp flour ⓘ
- 1 cup white wine ⓘ
- 3/4 cup water ⓘ
- 1 tsp salt ⓘ
- 1/2 tsp pepper ⓘ
- 1 bay leaf ⓘ
- 2 fresh tomatoes, sliced ⓘ
- 3 medium sweet potatoes, peeled and cubed ⓘ
- 5 medium firm bananas, peeled and sliced lengthwise ⓘ
Instructions
- Heat 1/4 cup salad oil in a frypan.
- Add chicken pieces, chopped onion, and chopped garlic; sauté until crisp, turning evenly.
- Sprinkle with flour, then add white wine, water, salt, pepper, and bay leaf; mix well.
- Cover and cook for 30 minutes.
- Add peeled and cubed sweet potatoes; continue cooking for another 30 to 35 minutes at 350°F.
- Just before serving, heat remaining 1/4 cup oil and sauté sliced bananas until golden.
- Arrange cooked chicken in the center of a platter, surround with potatoes and bananas.
