Ingredients

  • 2 1/2 to 3 lb chicken parts
  • 1/2 cup salad oil
  • 1 medium onion, chopped
  • 1 clove garlic, chopped
  • 2 Tbsp flour
  • 1 cup white wine
  • 3/4 cup water
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 bay leaf
  • 2 fresh tomatoes, sliced
  • 3 medium sweet potatoes, peeled and cubed
  • 5 medium firm bananas, peeled and sliced lengthwise

Instructions

  1. Heat 1/4 cup salad oil in a frypan.
  2. Add chicken pieces, chopped onion, and chopped garlic; sauté until crisp, turning evenly.
  3. Sprinkle with flour, then add white wine, water, salt, pepper, and bay leaf; mix well.
  4. Cover and cook for 30 minutes.
  5. Add peeled and cubed sweet potatoes; continue cooking for another 30 to 35 minutes at 350°F.
  6. Just before serving, heat remaining 1/4 cup oil and sauté sliced bananas until golden.
  7. Arrange cooked chicken in the center of a platter, surround with potatoes and bananas.
