Instructions
- In a large saucepan, cook the onion in butter until tender.
- Stir in remaining ingredients, except tuna and cheese; bring to a boil.
- Cover and simmer for 15 minutes or until rice is tender.
- Stir in white albacore tuna and 1/2 cup of cheddar cheese.
- Top with remaining cheese just before serving.
- Refrigerate leftovers.
