Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons cinnamon
  • 3/4 cup chopped walnuts or pecans
  • 3 eggs
  • 2 cups sugar
  • 3/4 cup vegetable oil
  • 2 teaspoons vanilla
  • 1 (8 oz) can crushed pineapple
  • 2 cups prepared fruit or vegetables

Instructions

  1. Combine flour, soda, salt, baking powder, cinnamon, and nuts; set aside.
  2. Beat eggs lightly in a large mixing bowl; add sugar, oil, and vanilla and beat until creamy.
  3. Drain pineapple, reserving juice if needed.
  4. Stir in pineapple and prepared fruit or vegetables.
  5. Add dry ingredients, stirring only until moistened.
  6. Spoon batter into 2 well-greased and floured 9x5x3-inch loaf pans.
  7. Bake at 350°F (175°C) for one hour or until done.
  8. Cool for 10 minutes before removing from pans.
  9. Cool on racks.
