Ingredients

  • 1 cup butter
  • 1 cup sugar
  • 4 eggs
  • 1 cup bananas, mashed
  • 4 cups flour
  • 1 teaspoon soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 (16 oz.) can crushed pineapple, undrained
  • 1 cup coconut
  • 1 (8 oz.) jar cherries, chopped and drained
  • 1 cup nuts, chopped

Instructions

  1. Cream together the butter and sugar.
  2. Add eggs and mix well.
  3. Stir in mashed bananas.
  4. Sift dry ingredients (flour, soda, baking powder, salt) and add to the mixture.
  5. Fold in crushed pineapple (undrained), coconut, chopped drained cherries, and chopped nuts.
  6. Divide the batter into three greased loaf pans.
  7. Bake at 350°F (175°C) for 1 hour and 10 minutes, or until done.
  8. Allow to cool before removing from pans and serving.
