  • 1 2/3 cups American Beauty alphabet pasta
  • 1 1/3 cups carrots, sliced
  • 1 cup celery, finely chopped
  • 1/4 cup onion, chopped
  • 3 quarts water
  • 1 Tbsp. salt
  • 6 peppercorns

Instructions

  1. In a 6 to 8-quart Dutch oven, combine the chicken, water, salt, peppercorns, and poultry seasoning.
  2. Bring to a boil.
  3. Cover and cook over low heat for one hour or until the chicken is tender.
  4. Remove the chicken and peppercorns from the broth.
  5. Skim off any fat from the surface.
  6. Remove the meat from the bones and return it to the soup.
  7. Add the alphabet pasta, carrots, celery, and onion to the soup.
  8. Cook, covered, for 20 to 30 minutes or until the alphabet pasta is tender.
  9. Season with additional salt and pepper to taste.
