Tips & Substitutions

For added flavor, consider marinating the chicken in Worcestershire sauce, honey, and spices for at least an hour before baking. If you don't have red potatoes, you can substitute with Yukon gold or fingerling potatoes. Feel free to add other vegetables like carrots or zucchini for variety. This dish is a great way to use up seasonal produce from your garden or local market.

Serving Suggestions

Serve the baked chicken packs with a fresh garden salad or steamed vegetables for a complete meal. A side of rice or quinoa pairs beautifully with the flavors of this dish. You can also serve it alongside a light vinaigrette dressing to enhance the vegetables. For a heartier option, consider a slice of crusty bread.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the foil packets in a preheated oven at 350°F for about 15-20 minutes, or until heated through. You can also microwave the contents in a bowl, but be cautious not to overcook the chicken.

Frequently Asked Questions

Can I use frozen chicken breasts for this recipe?

Yes, you can use frozen chicken breasts, but they will require a longer cooking time. Ensure they reach an internal temperature of 165°F before serving. It's best to thaw them in the refrigerator overnight for more even cooking.

What can I substitute for Worcestershire sauce?

If you don't have Worcestershire sauce on hand, you can use soy sauce mixed with a little vinegar and sugar as a substitute. Alternatively, a blend of balsamic vinegar and a touch of mustard can work well to mimic the tangy flavor.

Is it possible to cook these chicken packs on a grill?

Absolutely! You can grill the foil packets over medium heat for about 20-25 minutes, turning them occasionally. Just ensure the chicken is cooked through and the vegetables are tender. This method adds a lovely smoky flavor to the dish.
