Angel Hash Salad

Ingredients
- 1 (1 lb.) can crushed pineapple, drained well ⓘ
- 1 (1 lb.) can fruit cocktail, drained well ⓘ
- 2 Tbsp. cornstarch ⓘ
- 1/4 cup sugar ⓘ
- 2 egg yolks, beaten
- 1 cup syrup from pineapple and fruit cocktail ⓘ
- 1 cup heavy cream, whipped or Cool Whip ⓘ
- 1/4 cup chopped walnuts ⓘ
- 2 cups miniature marshmallows ⓘ
- 2 or 3 bananas, sliced ⓘ
Instructions
- Combine in a saucepan the cornstarch and sugar.
- Mix well; add the beaten egg yolks and the syrup from pineapple and fruit cocktail. Blend well.
- Cook over medium heat, stirring constantly, until thickened.
- Allow the mixture to cool thoroughly.
- Fold in the whipped cream, chopped walnuts, miniature marshmallows, crushed pineapple, and fruit cocktail.
- Cover and chill overnight.
- Just before serving, add sliced bananas.
- Serve on lettuce leaves.
