Ingredients

  • 1 (1 lb.) can crushed pineapple, drained well
  • 1 (1 lb.) can fruit cocktail, drained well
  • 2 Tbsp. cornstarch
  • 1/4 cup sugar
  • 2 egg yolks, beaten
  • 1 cup syrup from pineapple and fruit cocktail
  • 1 cup heavy cream, whipped or Cool Whip
  • 1/4 cup chopped walnuts
  • 2 cups miniature marshmallows
  • 2 or 3 bananas, sliced

Instructions

  1. Combine in a saucepan the cornstarch and sugar.
  2. Mix well; add the beaten egg yolks and the syrup from pineapple and fruit cocktail. Blend well.
  3. Cook over medium heat, stirring constantly, until thickened.
  4. Allow the mixture to cool thoroughly.
  5. Fold in the whipped cream, chopped walnuts, miniature marshmallows, crushed pineapple, and fruit cocktail.
  6. Cover and chill overnight.
  7. Just before serving, add sliced bananas.
  8. Serve on lettuce leaves.
