Ingredients

  • 2 c. sugar
  • 1 c. cooking oil
  • 3 eggs
  • 1 tsp. salt
  • 3 c. plain flour
  • 1 tsp. soda
  • 3 c. chopped apples
  • 2 tsp. vanilla
  • 1 c. chopped nuts
  • 2 c. coconut
  • 1 c. powdered sugar
  • juice of 1 lemon
  • 1 tsp. butter

Instructions

  1. Mix the sugar, cooking oil, eggs, salt, plain flour, soda, chopped apples, vanilla, chopped nuts, and coconut (if using) together thoroughly.
  2. Pour the batter into a greased tube pan.
  3. Bake in a preheated oven at 300°F (150°C) for 1 hour and 15 minutes.
  4. Remove from oven and prepare the glaze by boiling together powdered sugar, lemon juice, and butter.
  5. Pour the warm glaze over the hot cake and let it soak in before serving.
