Ingredients

  • 1 cup sugar
  • 1/2 cup shortening
  • 1 egg
  • 4 medium apples, cored and chopped
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 cup raisins (optional)
  • 1 cup chopped nuts (optional)

Instructions

  1. Combine shortening and sugar in a large bowl; mix well.
  2. Add the egg; blend thoroughly.
  3. Add the chopped apples, vanilla, baking powder, salt, flour, baking soda, raisins (if using), and chopped nuts (if using); stir until the dry ingredients are moistened.
  4. Pour the batter into a greased and floured bread pan.
  5. Sprinkle topping over the mixture (optional).
  6. Bake in a preheated oven at 350°F (175°C) for about 60 minutes or until a toothpick inserted into the center comes out clean.
