Ingredients

  • 2 c. flour
  • 1/2 tsp. salt
  • 1/2 tsp. soda
  • 1 tsp. baking powder
  • 1/3 c. shortening
  • 1/2 c. sugar
  • 1/2 c. brown sugar
  • 1 egg
  • 1/2 c. peanuts
  • 1/2 c. raisins
  • 1 Tbsp. grated orange rind
  • juice of 1 orange
  • 1 c. shredded raw apple

Instructions

  1. Mix flour, salt, soda, and baking powder.
  2. Cream shortening, sugar, brown sugar, and egg together.
  3. Combine the creamed mixture with the flour mixture and orange juice.
  4. Blend well to combine.
  5. Add raisins, peanuts, shredded raw apple, and grated orange rind.
  6. Pour batter into a loaf pan.
  7. Bake in a preheated oven at 400°F for 45 minutes.
