Ingredients

  • 1 medium onion, finely chopped
  • 1/4 cup butter or margarine
  • 1 teaspoon salt
  • pinch of pepper
  • 1/4 teaspoon oregano
  • 2 1/2 cups soft bread crumbs
  • 1 3/4 cups chopped apples
  • 1/2 cup boiling water
  • boned pork shoulder with deep pocket

Instructions

  1. Cook the chopped onion in butter or margarine until golden brown.
  2. Combine the cooked onion with remaining stuffing ingredients: salt, pepper, oregano, bread crumbs, chopped apples, and boiling water.
  3. Set oven to moderate 350°F.
  4. Fill the pocket in the boned pork shoulder with the stuffing mixture.
  5. Fasten the opening with white twine.
  6. Place the stuffed pork on a rack in an open roaster.
  7. Roast approximately 40 minutes per pound until cooked through.
