Ingredients

  • 1/2 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 1/2 teaspoon grated fresh lemon rind
  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1 1/2 cups finely chopped tart apples
  • 1/2 cup chopped nuts
  • 1/4 cup milk
  • 1 teaspoon vanilla

Instructions

  1. Cream together the margarine and sugar.
  2. Beat in the eggs one at a time.
  3. Sift together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. In a small bowl, add 1/2 cup of the dry mixture to the chopped apples and nuts and toss to coat.
  5. Fold the dry ingredients into the creamed mixture, then add milk and vanilla, mixing until just combined.
  6. Gently fold in the coated apples and nuts.
  7. Pour the batter into a greased 9 x 5-inch loaf pan.
  8. Bake at 350°F (175°C) for about 1 hour or until a toothpick inserted into the center comes out clean.
