Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1.5 teaspoons ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 2 eggs
  • 0.66 cup thawed frozen unsweetened apple juice concentrate
  • 0.33 cup melted butter or margarine
  • 1 teaspoon vanilla
  • 1 cup finely chopped peeled apple
  • 0.5 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease 12 medium-sized muffin cups or line with paper liners; set aside.
  3. Combine all-purpose flour, baking powder, ground cinnamon, ground nutmeg, and salt in a medium bowl.
  4. Add beaten eggs, thawed frozen apple juice concentrate, melted butter, and vanilla; mix just until dry ingredients are moistened.
  5. Stir in finely chopped peeled apples and chopped walnuts.
  6. Spoon batter into prepared muffin cups, filling each about 3/4 full.
  7. Bake for 25 minutes or until golden brown.
  8. Let stand in the pan on a wire rack for 5 minutes.
  9. Remove muffins from pan and serve warm or at room temperature.
