Ingredients

- 2 eggs ⓘ
- 0.66 cup thawed frozen unsweetened apple juice concentrate ⓘ
- 0.33 cup melted butter or margarine ⓘ
- 1 teaspoon vanilla ⓘ
- 1 cup finely chopped peeled apple ⓘ
- 0.5 cup chopped walnuts ⓘ
Instructions
- Preheat oven to 350°F (175°C).
- Grease 12 medium-sized muffin cups or line with paper liners; set aside.
- Combine all-purpose flour, baking powder, ground cinnamon, ground nutmeg, and salt in a medium bowl.
- Add beaten eggs, thawed frozen apple juice concentrate, melted butter, and vanilla; mix just until dry ingredients are moistened.
- Stir in finely chopped peeled apples and chopped walnuts.
- Spoon batter into prepared muffin cups, filling each about 3/4 full.
- Bake for 25 minutes or until golden brown.
- Let stand in the pan on a wire rack for 5 minutes.
- Remove muffins from pan and serve warm or at room temperature.
