Ingredients

  • 1 cup applesauce
  • 1 cup All-Bran cereal
  • 1/2 cup margarine
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 3/4 cup sugar
  • 2 eggs
  • 1 2/3 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup raisins
  • 1/2 cup chopped walnuts

Instructions

  1. In a small bowl, mix together applesauce and All-Bran cereal.
  2. In a large bowl, beat margarine, cinnamon, cloves, and sugar until well combined.
  3. Add eggs to the mixture and beat again.
  4. In a separate bowl, combine flour, baking soda, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the applesauce-bran mixture, and mix until just combined.
  6. Fold in raisins and chopped walnuts, if desired.
  7. Pour the batter into a greased loaf pan.
  8. Bake at 350°F (175°C) for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool on a rack.
  10. Wrap and store overnight before slicing.
