Ingredients

  • 6 oz. can pecan halves
  • 2/3 cup shortening
  • 1/2 cup sugar
  • 15 or 16 oz. applesauce
  • 2 1/2 cups all-purpose flour
  • 1/3 cup milk
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 2 eggs
  • salt
  • 3 oz. package cream cheese
  • 1 tablespoon apple jelly
  • 1 cup confectioners sugar

Instructions

  1. Preheat oven to 350°F. Grease and flour a 13 x 9-inch baking pan.
  2. Reserve 18 pecan halves for garnish. Chop remaining pecan halves and set aside.
  3. In a large bowl with a mixer at high speed, beat shortening and sugar until light and fluffy.
  4. Add applesauce, all-purpose flour, milk, baking soda, ground cinnamon, ground allspice, eggs, and salt. Beat at low speed until well mixed, occasionally scraping the bowl.
  5. Stir in chopped pecans.
  6. Pour batter into the prepared pan.
  7. Bake for 35 to 40 minutes until a toothpick inserted in the center comes out clean.
  8. Cool the cake in the pan for 10 minutes, then remove and cool completely on a wire rack.
