Ingredients

  • 1 tablespoon olive oil
  • 8 skinned chicken breast halves
  • 1/2 cup unbleached white flour
  • 1 teaspoon salt
  • 1/3 to 1/2 cup apricot preserves
  • 1 tablespoon Dijon mustard
  • 1/2 cup non-fat yogurt or sour cream
  • 2 tablespoons slivered almonds

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cover the bottom of a shallow baking pan with 1 tablespoon of olive oil.
  3. Shake chicken breast halves in a bag with flour and salt until coated.
  4. Place chicken in a single layer in the baking pan and bake for 25 minutes.
  5. Combine apricot preserves, Dijon mustard, and non-fat yogurt or sour cream to make the apricot mixture.
  6. Spread the apricot mixture over the partially cooked chicken.
  7. Bake for an additional 30 minutes or until the chicken is cooked through.
