Ingredients

  • 1/2 eggplant
  • 1 green bell pepper
  • 1 potato
  • 1 large onion
  • 2 carrots
  • 1/4 lb. green beans
  • 2 zucchini squash
  • 2 summer squash
  • mushrooms
  • 2 fresh tomatoes
  • 2 (8 oz.) cans tomato sauce
  • 1/2 c. oil
  • 2 Tbsp. butter

Instructions

  1. Cut all vegetables into medium size pieces into large bowl. Add oil and tomato sauce.
  2. Mix together and pour into large baking pan and cover with foil.
  3. Cook at 350° for 1 hour.
  4. Baste every 20 minutes.
  5. If it gets dry, add more sauce.
