Ingredients

  • 3 to 4 cups cooked vegetables
  • 1/4 cup green pepper, chopped
  • 1/2 cup celery, chopped
  • 1/3 cup onion, finely chopped
  • 3 tablespoons margarine
  • 2 tablespoons flour
  • salt
  • pepper
  • 1/4 cup grated Cheddar cheese
  • 1/4 cup Parmesan cheese

Instructions

  1. Saute green pepper, celery, and onion in margarine.
  2. Slowly add flour, reserved vegetable liquid, salt, pepper, and Cheddar cheese; cook until thickened and cheese melts.
  3. Pour some of the cheese sauce into a 10 x 6-inch baking pan.
  4. Top with cooked vegetables.
  5. Pour remaining sauce over the vegetables.
  6. Sprinkle with Parmesan cheese and paprika.
  7. Bake in the oven or broil 4 inches from heat until lightly browned on top.
