Ingredients

  • 1 c. fresh broccoli flowerets
  • 1 c. fresh cauliflowerets
  • 1 c. sliced fresh mushrooms
  • 1/3 c. sliced carrots
  • 1/3 c. finely chopped onion
  • 1 Tbsp. water
  • 2 Tbsp. all-purpose flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2/3 c. milk
  • 1/2 c. finely shredded sharp Cheddar cheese

Instructions

  1. In a 1-quart Pyroceram casserole, combine broccoli, cauliflower, mushrooms, carrots, onion, and water.
  2. Cover and microwave at high for 5 to 7 minutes or until vegetables are tender-crisp, stirring once.
  3. Set aside.
  4. In a saucepan, mix flour, salt, and pepper.
  5. Gradually stir in milk and cook, stirring constantly, until thickened.
  6. Add shredded Cheddar cheese and stir until melted.
  7. Pour cheese sauce over the cooked vegetables.
  8. Sprinkle additional cheese on top if desired and bake or broil until golden brown.
