Ingredients

  • 10 eggs
  • 2 c. plain flour
  • 2 c. self-rising flour
  • 1 Tbsp. baking powder
  • 1 Tbsp. vanilla
  • 1 1/2 lb. crystallized pineapple
  • 1 lb. cherries, halved
  • 1 lb. citron, finely cut
  • 4 c. chopped nuts
  • 1 lb. butter
  • 2 1/2 c. sugar
  • 3/4 c. wine
  • 1 lb. butter
  • 10 eggs

Instructions

  1. Cream the butter and sugar together until light and fluffy.
  2. Add the eggs one at a time, beating well after each addition.
  3. Stir the baking powder into the wine or syrup and add to the mixture.
  4. Alternately fold in the flour and wine mixture until just combined.
  5. Stir in the crystallized pineapple, halved cherries, citron, and chopped nuts.
  6. Line two large cake pans with wax paper and grease them.
  7. Divide the batter evenly between the prepared pans.
  8. Bake in a preheated oven at 350°F (175°C) for approximately 90 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
