Ingredients

  • 3/4 cup raisins
  • 3/4 cup chopped dates
  • 1 1/2 cups water
  • 1/2 cup margarine
  • 1/3 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cups flour (part whole wheat)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Combine water and raisins in a saucepan and bring to a slow boil, then cook for approximately 20 minutes.
  2. Add chopped dates to the mixture and allow to cool.
  3. Cream together margarine, brown sugar, egg, and vanilla until smooth.
  4. Add the cooled fruit mixture to the creamed mixture.
  5. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  6. Gradually combine the dry ingredients with the wet mixture, mixing just until combined.
  7. Do not overmix the batter.
  8. Pour the batter into greased muffin tins and bake at 350°F (175°C) for 20 to 25 minutes.
