Ingredients

  • giblets from 1 bird, chopped
  • 1/4 cup butter
  • 2 tablespoons chopped onion
  • 6 cups bread, broken in small pieces
  • 3 eggs
  • 1 cup chopped celery
  • 6 tablespoons chopped parsley
  • 1 1/4 teaspoons salt
  • 3/4 teaspoon paprika
  • 1/4 teaspoon nutmeg
  • 1 1/4 cups nutmeats (black walnuts preferred)
  • milk to moisten

Instructions

  1. Saute giblets in butter until browned.
  2. Remove giblets and saute chopped onions in the same pan.
  3. Combine cooked giblets, onions, bread pieces, chopped celery, parsley, salt, paprika, nutmeg, and nutmeats.
  4. Add milk to moisten the mixture as needed.
  5. Bake in a shallow pan until browned and heated through.
