Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup chopped pecans
  • 3 tablespoons white sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1 pound cream cheese
  • 1/2 cup white sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine graham cracker crumbs, chopped pecans, sugar, cinnamon, and melted butter in a bowl.
  3. Press the mixture into the bottom of a 9-inch spring-form pan to form the crust.
  4. Bake the crust for 10 minutes, then remove from oven and let cool slightly.
  5. In a separate bowl, beat the cream cheese until smooth.
  6. Add sugar, eggs, and vanilla extract to the cream cheese and mix well.
  7. Pour the cream cheese filling over the cooled crust.
  8. Bake the cheesecake at 350°F (175°C) for about 45-50 minutes, or until set.
  9. Allow the cheesecake to cool completely before refrigerating for at least 4 hours or overnight.
  10. Serve chilled, optionally garnished with additional pecans or autumnal toppings.
