Ingredients

  • 2 c. sugar
  • 3/4 c. shortening
  • 3 eggs
  • 2 c. flour
  • 3 tsp. cinnamon
  • 3/4 tsp. salt
  • 3/4 tsp. allspice
  • 1 1/2 tsp. soda
  • 1 1/2 c. pureed avocado
  • 3/4 c. buttermilk
  • 2 tsp. vanilla extract
  • 1/2 c. chopped walnuts
  • 3/4 c. raisins

Instructions

  1. Combine sugar and shortening, beating until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Sift dry ingredients together (flour, cinnamon, salt, allspice, soda).
  4. Fold the dry ingredients into the sugar mixture.
  5. Add pureed avocado and buttermilk, mixing until well combined.
  6. Stir in vanilla extract, chopped walnuts, and raisins.
  7. Let the batter stand for 10 minutes.
  8. Grease a glass loaf pan with additional shortening and line with waxed paper.
  9. Fill the pan half full with batter.
  10. Microwave on High for 8 minutes, turning a quarter turn every 2 minutes.
  11. Cool for a few minutes; remove to a rack to cool completely.
  12. Repeat with remaining batter for the second loaf.
