- Dice cauliflower into hash brown-sized pieces and set aside.
- Cut bacon crosswise into 1/2-inch pieces and sauté until almost crisp.
- Add chopped green onions to the bacon and continue simmering a few minutes.
- Add canned chicken to the skillet and heat through.
- Remove mixture with a slotted spoon and place in a bowl, reserving a tablespoon of bacon drippings in the skillet.
- Stir in heavy cream, grated Parmesan cheese, butter, garlic salt, and ground nutmeg.
- Return the bacon and chicken mixture to the skillet and cook until heated through.
- Serve hot, garnished with additional chopped green onions if desired.
