Bacon & Egg Lasagna

A hearty baked lasagna layered with crispy bacon, tender eggs, Swiss cheese, and a creamy white sauce, perfect for comforting family dinners or special gatherings.

Ingredients

  • 1 lb. sliced bacon, diced
  • 1 large onion, chopped
  • 1/3 cup all-purpose flour
  • 1/2 to 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cups milk
  • 12 lasagna noodles, cooked and drained
  • 12 hard-cooked eggs, sliced
  • 2 cups shredded Swiss cheese
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons minced fresh parsley

Instructions

  1. In a skillet, cook diced bacon until crisp.
  2. Remove bacon with a slotted spoon and drain on paper towels.
  3. Reserve 1/3 cup of bacon drippings in the skillet.
  4. In the drippings, sauté chopped onion until tender.
  5. Stir in flour, salt, and pepper until blended.
  6. Gradually stir in milk, bringing to a boil.
  7. Cook and stir for 2 minutes until thickened.
  8. Remove from heat and set aside.
  9. Spread 1/2 cup of the sauce in a greased 13 x 9 x 2 inch baking dish.
  10. Layer with four cooked lasagna noodles.
  11. Add a third of the sliced eggs, bacon, shredded Swiss cheese, and white sauce.
  12. Repeat the layering two more times.
  13. Sprinkle grated Parmesan cheese on top.
  14. Bake uncovered at 350°F for 35 to 40 minutes or until bubbly.
  15. Sprinkle with minced fresh parsley.
  16. Let stand for 15 minutes before cutting and serving.
