Bacon Mushroom Roll-Ups

- Cook bacon slices until crispy, then dice and set aside.
- In a large skillet, sauté bacon, chopped mushrooms, chopped onion, salt, and pepper for 5 to 8 minutes.
- Stir in room-temperature cream cheese and set aside.
- Cut the crusts off the bread slices and roll each slice with a rolling pin to 1/4-inch thickness.
- Spread about 2 tablespoons of the mushroom and bacon mixture over each bread slice.
- Roll up the bread slices and secure with a toothpick. Refrigerate for about 1 hour.
- Cut the rolled bread into 1-inch bites.
- Place the bites on a cookie sheet.
- Brush the bites with melted butter.
- Bake at 375°F (190°C) for 10 to 15 minutes until golden.
