Ingredients

  • 5 whole chicken breasts
  • 8 flour tortillas
  • 1 (10 3/4 oz.) can cream of celery soup
  • 1 (10 3/4 oz.) can cream of chicken soup
  • 1 cup milk
  • 1 cup green chili salsa sauce
  • 1 grated onion
  • 1 small can chopped olives
  • 1/2 pound grated cheddar cheese

Instructions

  1. Wrap the chicken breasts in foil and bake at 450°F for 1 hour.
  2. Remove the chicken from the oven, let cool slightly, then cut into chunks.
  3. Butter a Pyrex dish and pour the chicken juices into it.
  4. Cut the tortillas into 1-inch strips and layer them on the bottom of the dish.
  5. Mix the cream of celery soup, cream of chicken soup, milk, green chili salsa sauce, grated onion, and chopped olives together.
  6. Layer the chicken pieces on top of the tortilla strips and pour half of the soup mixture over the chicken.
  7. Repeat the layers with remaining tortillas, chicken, and soup mixture.
  8. Top with grated cheese and refrigerate for 12 to 18 hours.
  9. Bake in a slow oven at 300°F for 90 minutes before serving.
