Ingredients

  • 1 egg
  • 2 (15 1/2 oz.) cans hominy
  • 12 oz. cheese, cubed
  • 3/4 cup milk
  • 1 small onion, chopped
  • 3 strips bacon, cooked and crumbled
  • 1 tablespoon butter
  • 1/4 teaspoon pepper
  • chopped fresh parsley (optional)

Instructions

  1. Beat the egg well in a mixing bowl.
  2. Add the hominy and mix well to combine.
  3. Stir in the cheese, milk, chopped onion, crumbled bacon, butter, and pepper.
  4. Spoon the mixture into an 11 x 7 x 2-inch baking pan.
