Ingredients

  • 2 large eggs
  • 1 1/2 cups sour cream
  • 2 cups fresh corn kernels
  • 1 (8 oz.) package Monterey Jack cheese, cut into 1/2-inch cubes
  • 1/2 cup soft breadcrumbs
  • 1 (4.5 oz.) can chopped green chilies, drained
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup shredded Cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine eggs and sour cream in a large bowl.
  3. Stir in corn, Monterey Jack cheese, green chilies, salt, and pepper.
  4. Pour the mixture into a greased 10-inch quiche dish or 2-quart baking dish.
  5. Bake uncovered for 35 minutes or until a knife inserted in the center comes out clean.
  6. Sprinkle with shredded Cheddar cheese and bake for an additional 5 minutes.
  7. Let stand for 10 minutes before serving.
