Ingredients

  • 1 lb. frozen fillets of sole
  • 1/4 tsp. salt
  • 1 (4 oz.) can sliced mushrooms, drained
  • 1 carrot, thinly sliced
  • 2 Tbsp. finely chopped green onion
  • 1 tsp. minced parsley
  • 1/4 cup light cream
  • 2 Tbsp. butter or margarine

Instructions

  1. Preheat oven to 375°F (moderately hot).
  2. Thaw fish fillets enough to separate them.
  3. Arrange the fillets in a greased shallow baking dish.
  4. Sprinkle the fillets with salt.
  5. Arrange sliced mushrooms, thinly sliced carrot, chopped green onion, and minced parsley on top of the fish.
  6. Pour light cream over the ingredients.
  7. Dot the top with butter and sprinkle with cheese if desired.
  8. Bake for 20 to 30 minutes until the fish is fork-tender.
