Baked Stuffed Macaroni Shells

Ingredients
- 1/2 lb hamburger ⓘ
- 1/2 cup chopped onion ⓘ
- 1/2 teaspoon minced fresh garlic ⓘ
- 1 (15 oz) can tomato sauce ⓘ
- 1 (6 oz) can tomato paste ⓘ
- 1/2 teaspoon salt ⓘ
- a sprinkle of nutmeg ⓘ
- 1 1/2 cups cottage cheese ⓘ
- 1 egg ⓘ
- oregano ⓘ
- 1/4 teaspoon pepper ⓘ
- 1/4 cup grated Parmesan cheese ⓘ
- 4 oz jumbo macaroni (18 shells) ⓘ
Instructions
- In a large skillet, cook chopped onion, minced garlic, and hamburger until meat is browned.
- Pour off any excess fat.
- Stir in tomato sauce, tomato paste, salt, pepper, and oregano.
- Bring mixture to a boil, then reduce heat and simmer for 15 minutes.
- Meanwhile, in a medium bowl, mix cottage cheese, egg, grated Parmesan cheese, chopped parsley, and a pinch of nutmeg.
- Preheat oven to 350°F (175°C).
- Spread 2 1/2 cups of the tomato sauce mixture in a baking dish.
- Fill each cooked macaroni shell with the cheese mixture and arrange them in the baking dish.
- Top the shells with the remaining sauce.
- Bake in the preheated oven for 25 to 30 minutes until bubbly and heated through.
